Salmon Patties

I'm not sure if salmon patties are a Southern thang or not. We had them often growing up, and I LOVE them. They're a comfort food for me.

I hadn't made them in forever, and yesterday when I was reading my friend April's blog,
Straight from the Heart, I saw that she had posted about them. I went out today and bought all the fixings I needed, and tonight, we are having salmon patties for dinner! In fact, I'm having the exact meal April posted.

So check it out, and if you have never had salmon patties - give them a try!


1. You need one can of Pink Salmon.
2. Dump the entire can into a mixing bowl and remove the scales (that's just what I prefer).
3. Add one egg to the salmon and mix well.
4. To that mixture, add about 10-15 crushed saltine crackers; mix well. Add salt and pepper to taste.
5. Form the mixture into about 6 hamburger size patties. Add a small amount of cooking oil to a frying pan (I use Canola oil) and fry the patties on each side until golden brown.


Note from Cyndy: My kids love these too. I use olive oil, and I don't take out the scales/bones/any of that stuff. They're actually soft cartilage and once it's all mixed in, you don't taste or feel them, and they're very healthy. But I know they creep a lot of people out! =D

Easy Cheesy Meatless Monday




So, I'm posting my Meatless Monday/ Meatfree Monday on....TUESDAY! Because that? Is how I roll.
Last night's meat-free meal was SUPER easy and very good.
It consisted of cheese quesadillas, sesame blue chips (OMG I looove those things!), fresh salsa (not HOMEMADE, just fresh from the produce section - this is EASY, remember?), and mexi-corn.
It could not have been much quicker & easier! The quesadillas consisted of flour tortillas and shredded colby jack cheese. You just toss some cheese on the tortilla, fold it in half, and cook it like a grilled cheese sandwich.
For the mexi-corn, I just added a couple of tablespoons of salsa to the corn.
The kids devoured it!

See? You too can try to go Meatless!
One day a week - give up meat!

Introducing My Assistant Chef

My daughter Elayna, who will be 9 on Saturday, is my Official Assistant Chef. She takes her role very seriously and heaven forbid I accidentally complete a task myself that she is capable of doing! She gets VERY upset with me!
This particular dinner was very simple. I had to get up in the middle of my normal sleeping time (again!) so I was tired and not really feeling it. Also, the kids were hungry very early, so we went ahead and cooked early. We had sausages with peppers & onions on buns, mac & cheese, and tortilla chips.

Elayna did the macaroni & cheese (from a box) by herself, except that I drained the water. She helped me with the sausages.

And it was a big hit!







Happy kids + full bellies + easy dinner = Happy Mama!
